It was on a day in 2008 that S\u00e9bastien and Florence\u2019s neighbor knocked on their door to offer them the opportunity to lease just under one and a half hectares of vineyards.<\/p>\n
Without hesitation, they accepted immediately. They continued to work at Domaine Lamy-Pillot, where Florence is the daughter, but in parallel took care of the leased vineyards until in 2011 Domaine Lamy-Caillat was officially born.<\/p>\n
Work continued in both domaines simultaneously, but it is in their small family venture that S\u00e9bastien and Florence fully express their philosophy: to attempt something more artisanal, more intimate, more rooted in the earth.<\/p>\n
Meticulous and passionate, S\u00e9bastien Caillat devotes obsessive attention to every detail, from the vineyard to bottling, leaving nothing to chance. Since the first vintage of Lamy-Caillat, improvements have been constant, harvest after harvest, revealing a remarkable path of growth.<\/p>\n
Deeply connected to Chassagne-Montrachet, S\u00e9bastien and Florence produce exclusively white wines. Their goal is simple and ambitious: to create great wines working closely with nature, with the utmost respect for the raw material. This desire to return to the origins is reflected in their winemaking methods, natural, traditional, and never forced.<\/p>\n
The hallmark of the Domaine is the long \u00e9levage, with wines spending two winters on the lees before bottling. The vinification is slow and respectful: after pressing with an old mechanical press and a short settling, the must is transferred directly into barrels where alcoholic and malolactic fermentation take place spontaneously and without temperature control.<\/p>\n
From 2013 onward, the \u00e9levage was further extended, reaching up to 28 months on the lees. After the long aging in barriques, the wines rest for another six months in stainless steel tanks, in contact with fine lees, before direct bottling from the barrel. No filtration, clarification only if necessary.<\/p>\n
